Lately it feels like we have been in a rut making the same meals, spaghetti, tacos and chicken and potatoes. I have tons of recipe books and thought I should make more use out of them. I found a bunch of recipes that we plan on trying but thought I would share with you a few that we love so far.
Creamy Pasta Primavera
Ingredients
- 1 lb penne pasta
- 2 (11 oz) frozen vegetables- Green Giant Steamers are my favorite
- 2 cups marinara
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan
Prepare pasta according to package directions.
While pasta is cooking, prepare the market blend vegetables according to package directions.
In a medium bowl, add the marinara and the cream and stir together.
Add the sauce to the pasta and stir to coat. Gently stir in the cooked vegetables and Parmesan.
Tater Tot Enchilada Bake
Ingredients
- 1 lb Ground beef
- 2 cloves Garlic
- 1 Scallions or cilantro
- 2 cups Tater tots
- 1 Yellow onion, finely chopped (about 2 cups), medium
- 1/2 cup Black olives
- 1 Salt and pepper
- 1/2 pack Taco or fajita seasoning
- 1 tbsp Olive oil
- 1 cup Mexican blend cheese
- 1 can Enchilada sauce
Instructions
Preheat the oven to 350 degrees F.
Add the oil to a skillet over medium heat, diced onions and garlic to skillet. Cook until just tender and set aside. Cook beef until completely browned, add ½ pack of taco seasoning and cook. Remove from heat and drain.
Add onions and garlic back to beef. Pour the can of enchilada sauce into the beef and continue cooking for 2-3 minutes.
Transfer the beef mixture into a 9-by-13-inch baking dish. Tater tots on top. Cheese and top with black olives.
Bake uncovered for 15-20 minutes or until the cheese is bubbly and tater tots are golden brown. Garnish with scallions or cilantro for added color. Serve warm while the cheese is gooey!
Bacon Ranch Chicken Bake
Ingredients
- 3-4 Chicken Breasts
- 6-8 Tablespoons Ranch Dressing
- 6-8 Slices Bacon
- 4 Ounces Cheddar Cheese or Colby Jack Cheese
Instructions
Place your chicken breast in a baking dish
Spread 1-2 tablespoons of ranch dressing on each chicken breast
Slice bacon to fit chicken breast and layer on top of ranch
Bake in oven preheated to 400. Bake for 25-35 minutes or until chicken is no longer pink.
Top with cheese and return to oven for 3-5 minutes or until cheese is melted.
